New cryoscopic temperature determination technology for plant-based products

The determination of cryoscopic temperature is an important parameter in the calculation low-temperature processing modes frozen products. process rapid freezing accompanied by changes, therefore, to develop energy-saving and effective methods preserving fruit berries, it necessary accurately determine some variables that affect result freezing. study aimed a differentiated analysis technique for determining crystallization eutectic points sucrose glucose solutions. To temperatures study, method thermal based on construction thermograms was used. conducted using berries grown Kemerovo region (Russia). As found were most influenced total (free bound) moisture content organic mineral substances berry juices. authors also determined different black currant, sea buckthorn, juneberry varieties. developed will allow simulation processes under various conditions.
